Weekly Menu: Week 1 (Aug 25 to Aug 31)

Sunday: We always do pizza on Sunday night. We get a personal pan and breadsticks from Pizza Hut and split it. We also use our credit card reward points to pay for it!

Monday: BBQ chicken and potato salad
BBQ chicken is super easy! Place 3 to 4 chicken breasts in the crockpot and cover with 1 to 1.5 bottles of your favorite   BBQ sauce. Cook on low for 6 to 7 hours. I use Kraft because I can get it for cheap and I haven't been able to find an out of this world bbq sauce recipe that rocks!
The potato salad is a trial recipe. I'll come back and edit it if its amazing. I combined two different recipes and tried my best to recreate McAlisters potato salad, since that is hubby's favorite. Whenever he is wanting potato salad we normally just drive up and get a side of it!

It's a keeper: potato salad
 2 to 3 lbs of russet potatoes (5 potatoes pealed)
 1 cup mayo
 4 tablespoons prepared mustard ( 2 of Dijon and regular)
 1 jar pickle spears
 1 tsp kosher salt
 1/2 tsp paprika (honestly I just turned it over and shook)
 3 hard boiled eggs
Cut potatoes into cubes, then boil until fork tender.  Trick: boil potatoes on high, when it starts to boil, turn to low and set timer for 10 mins and leave alone.  Drain.  Fold potatoes together with mayo, mustard, salt, pepper, and other seasonings you like.  Fold in pickles and eggs, then taste for seasonings.  

Tuesday: Chicken Salad
This is seriously one of our go to meals! We have this probably once every week or two!  I marinade the chicken in a Lawrys or Kroger 30 minute marinade before I go to work. When I get off work I put it in the oven and cook it. I use chicken tenders because they cook faster and that seems to be all we have frozen in this house :-). I cut them up, add them to a salad and top with croutons, bacon bits, cheese, and your favorite dressing! Voila, you have dinner for under 5$ depending on prices! Did you know Kroger salad has gone up over a dollar in the past month or two! It used to be 1.69, now it's up to $2.99! Another reason Aldi is my go to for fruit and veggies!

Wednesday: Church
Today is the final time with eating out with our life group for awesome August! I'll have to miss dinner, but I'll probably just grab something cheap, or pack a sandwich to eat on the way there from work. But I finally got full time status at work! :-)

Thursday: Spaghetti and Meatballs
Another late night of working. About 3 or 4 weeks ago I came across a recipe for BBQ meatballs made by the pioneer woman! Needless to say, I made a huge batch of it and stuck it in the freezer!  I also came across a recipe for crockpot marina sauce and made that two weeks ago! We've been enjoying bbq meatballs, meatball subs, and now it's time to try spaghetti and meatballs!

Friday: Date Night
We haven't had a date night in probably well over a month, but our credit card reward points came in and we were able to get 2 gift cards for eating out! Yay 5% cash back on gas! So excited about spending time with hubby!

Saturday: has yet to be determined
We will probably grill out hot dogs or something easy.

So that will wrap up week 1. This is a way I keep up with it. I hang it in the corner of my kitchen so I can glance at it before I go to bed so I can remember what to take out of the freezer.  The good thing with this weeks menu is its mostly stuff you can find around my house, and hopefully yours! Since its the end of the month our grocery budget has shriveled up so we had to use what we had on hand, thankful for an awesome stockpile :-)
